Garlic naan

Garlic naan is an Indian flatbread which goes well with all types of curries. Naan infused with garlic and chopped coriander gives that amazingly earthen taste. Today I will tell you how to make garlic naan on tava (flat pan) without using yeast.

Cooking time: 15 mins
Serving: 2

Ingredients needed:
1.) All purpose flour/Maida - 2 small cup
2.) Curd/Yogurt - 2-3 tbsp
3.) Salt - as per taste
4.) Baking soda - 1/2 tsp
5.) Sugar - 1/2 tsp
6.) Oil - 2-3 tbsp
7.) Warm water - 1/2 small cup
8.) Coriander leaves - few finely chopped
9.) Garlic pods - 3-4 minced
10.) Butter - for brushing naan and 1 tbsp for making garlic mixture

Preparation of dough:
1.) Take flour in a large bowl. Add salt, sugar and mix it.
2.) Make a small opening in the center and add curd/yogurt, baking soda and oil in the center. Slightly turn these with the flour and let it sit for approx 1 min. Notice that a lump will be formed in the flour. This is a chemical reaction which helps in fermentation and is important for the naan to be fluffy.
3.) Now mix well to incorporate everything into the flour.
4.) Slowly add warm water in little amount, knead and repeat this to make a smooth dough.
5.) Add 1 tbsp of oil in the center of the bowl and then again knead the dough.
6.) Cover the dough and set it aside for 4-5 hours in a warm place.

Note: For instant naan, kulcha or bhatura, add 1 packet of ENO salt at the time of mixing all the ingredients and knead the dough. Then keep it aside for 30 mins. fermentation will take place quickly and dough will be ready to make naan instantly.

Preparing garlic coriander mixture:
1.) Peel garlic pods and mince them finely. Similarly chop coriander leaves.
2.) Add 1 tbsp of butter in minced garlic. Warm the mixture for few mins. Keep it aside for further use. (You can also mix garlic and coriander to form a paste but I kept both separate).

Making garlic naan:
1.) After resting the dough, divide it into 4-6 equal balls (depending on how big you want your naan to be).
2.) Dust each ball with some flour, roll it in oval or oblong shape with the help of rolling pin. Do not roll it too thick or too thin.
3.) Now on one side of the naan sprinkle minced garlic mixture and chopped coriander leaves. sprinkle a pinch of flour on it and again roll it so that garlic sticks to the naan.
4.) Place one rolled naan on heated skillet and let it cook for 1-2 mins or till it shows tiny bubbles on the naan.
5.) Now flip the naan and place it directly on stove until slight charred and golden brown spots appear on it. (since I have induction stove at my home I am using grill on the flame for cooking on other side).
6.) Remove cooked naans from stove and immediately brush some butter on the naan to keep them moist and to give that rich creamy flavour. Finally, enjoy your garlic naan.. you deserve it !!
