Custard vermicelli/ Custard seviyan

Custard vermicelli is tasty and creamy dessert which is a fusion of milk based seviyan kheer and fruit based custard recipe. This dessert recipe can be easily made for any type of celebrations or occassions. I am a huge fan of custard recipes and always tries to make different types of custard recipes for my parties and feast. The most common is fruit custard and I make it using variety of seasonal fruits. This recipe is made by using roasted vermicelli noodles, custard powder, sugar, milk, dry fruits and fruits. Here I have tried to make it more colourful and presentable by mix and match with fruit choice. So lets jump on the recipe.

Cooking time : 30 mins

Serving : 6

Ingredients required :

1.) Vermicelli/seviyan - 1 cup ( Around 100gms)

2.) Custard powder - 2 tbsp (vanilla flavour)

3.) Sugar - 1/2 cup

4.) Milk - 1 litre ( full cream)

5.) Green cardamon/ choti elaichi - 5-6 crushed

6.) Milk - 1/4 cup ( For dissolving custard powder)

7.) Desi ghee/ clarified butter - 1 teaspoon

8.) Dried nuts - finely chopped cashews 8, almonds 8, walnuts 6, kishmish 10.

9.) Chopped fruits of your choice - I have used here 1 banana, 1 orange, few grapes, 1 apple.

10.) Saffron/kesar - 1/2teaspoon (optional)

11.) Tutti fruity - 2 tbsp.

Method of Preparation :

1.) Firstly, in a pan heat 1 teaspoon ghee and roast chopped dry nuts followed by 1 cup of vermicelli. Roast On low flame untill seviyan turns golden brown. Keep aside.




2.) In a large kadhai, heat 1 litre milk, add 1/2 teaspoon of kesar if you are using it. ( I have not used here). Stir well and get the milk to a boil.


3.) Add in roasted seviyan with nuts and give it a good mix. Also add 1/2 cup sugar and crushed cardamom, mix it well.


4.) Boil for 10 mins or until vermicelli gets cooked completely.

5.) In a small bowl add 2 tbsp of custard powder and 1/4 cup of cold milk. Mix well and make sure there are no lumps. Pour in custard slurry and stir it continously.


6.) Cool until the milk thickens and turns creamy. Transfer the custard seviyan into a large bowl, cool completely and refrigerated it for 1 hour.

7.) Add in chopped fruits and dried nuts on top. 


8.) For serving, take a tall glass add 1 tbsp of roasted vermicelli( this is optional, I have used here to get a crunchy texture and taste). further add 1/4 cup of chilled custard vermicelli. 

9.) Now top it with 2 tbsp of chopped fruits. Further add 1/4 cup of vermicelli custard and top it up with 1 tbsp of dried nuts and 1 tbsp of tutti fruity. Serve it chilled. Enjoy !!
