Penne arrabiata/Pasta arrabiata

Penne arrabiata is a classic Italian pasta recipe which is spicy, flavorful and quick to make. Arrabiata in Italian means "angry" so this dish is named as pasta arrabiata due to its spicy taste. This delicious pasta recipe is made from a rich and spicy tomato basil sauce. The addition of the garlic along with black pepper powder, red chilli flakes brings out the fresh flavors of penne arrabiata pasta. So let's jump on the recipe.


Preparation time : 15mins

Cooking time : 40 mins

Servings : 4-5

Ingredients required :

1.) Penne pasta - 3 cups

2.) Onion - 1 Large finely chopped

3.) Garlic - 7-8 cloves finely chopped

4.) Tomato - 8 medium sized

5.) Mixed Italian herbs - 1 tbsp

6.) Black pepper powder - 1 teaspoon

7.) Red chilli flakes - 1 tbsp

8.) Salt - to taste

9.) Oil - 3 tbsp ( prefer to use extra virgin olive oil)

10.) Water - 4 cups ( to boil the pasta)

11.) Basil leaves - few sprigs

12.) Dried red chillies : 5

13.) Cheese - 1 cup grated ( preferably parmesan but you can add any cheese of your choice.

Method of Preparation :

1.) To make the penne arrabiata pasta recipe, we need to cook the pasta first. So in a large pot, add water and bring it to a boil. Once the water has boiled, add a teaspoon of salt.

2.) Add the pasta to the boiling water and let it cook in the boiling water untill it is just cooked. This process takes around 12-15 mins.

3.) Once the pasta has cooked, drain the water and run the cooked pasta under running water to stop the cooking process.

4.) Drizzle some oil on top of pasta and make sure to coat all of the pasta with the oil so that pasta does not stick to each other.

Arrabiata pasta sauce preparation:

1.) Boil water in a pot. Wash tomatoes and make small cuts in each tomatoes. Once the water is boiled, add tomatoes and dried red chillies into it. 

2.) Once the tomatoes are soft and mushy, peel off the skin of tomatoes and blend the tomatoes and red chillies in mixer grinder to make a puree.

3.) Heat oil in a pan, add chopped garlic followed by chopped onion and saute it for 2 mins or until the onions turns soft.

4.) Once the onions have softened, add tomato puree, chilli flakes, mixed herbs, salt, black pepper corns powder and basil leaves. 

5.) Cook the Arrabiata pasta sauce together for few mins till the sauce comes together and you can smell the aromas in the air.

6.) Add the cooked penne pasta to the spicy arrabiata sauce and keep mixing till the sauce thickens and pasta is well coated with the sauce. Once done, switch off the flame check salt and spices according to your taste. Sprinkle cheese on the top. Transfer it to serving bowl and serve hot.
