Cheesy spinach corn paneer sandwich

Spinach and sweet corn is quite a popular combination and I personally like it in a sandwich. Cheesy spinach corn sandwich is one of those comfort foods which you can enjoy with tea or coffee on a dark and gloomy day, when the weather is not right or you are tiresome, not willing to cook. This grilled sandwich is prepared with creamy white sauce using all-purpose flour, cheese and milk, flavoured with Italian herbs, chilli flakes. The sweetness of corn, gooey goodness of white sauce and nutrients rich spinach complement each other perfectly. So let's start the recipe.


Preparation time - 15 mins

Cooking time - 20 mins

Servings - 4

Ingredients required :

1.) Bread slices - 8

2.) Spinach/ Palak - 2 cup chopped (Around 100 gm)

3.) Sweet corn (boiled) - 1/2 cup

4.) All purpose flour/Maida- 2 tablespoon

5.) Milk - 1/2 cup lukewarm

6.) Garlic - 3-4 cloves finely chopped

7.) Butter - 2 tablespoon + 4 tbsp for toasting bread slice

8.) Salt - as per taste

9.) Italian herbs seasoning - 1 tablespoon

10.) Chilli flakes - 1 teaspoon

11.) Black pepper powder - 1/2 teaspoon

12.) Cheese - 1 cup ( your choice, I have used mozzarella here)

13.) Onion - 1 small finely chopped (optional)

Method of Preparation:

1.) Creamy white sauce - Heat 2 tbsp of butter in a pan, once butter melts add maida to it and saute it for 1-2 mins till it's all roasted.

2.) Now add little by little warm milk and stir continuously to avoid any lumps, it should be a smooth creamy semi liquid paste. Now add salt, 1/4 tsp of black pepper powder, mix it and keep it aside.

3.) Heat 1 tbsp of butter in another pan and add freshly chopped garlic and chopped onion. Saute it for 1 min. 

4.) To this add sweet corn and blanched spinach and saute it for 2 mins.

5.) finally add Paneer cubes, Italian herbs, chilli flakes, salt, chat masala, white sauce, handful of cheese and mix it well. Creamy stuffing is ready.



6.) Assemble and grill sandwich - Spread spinach corn mixture generously on bread slices. Top it up with cheese slice or 1 tbsp of grated mozzarella (if using) to make it more cheesy.

7.) Cover it with another slice and spread butter on top of it. Melt remaining tablespoon of butter on pan. Toast the bread slices from both the sides till golden brown and crispy.


8.) Cut into slices and serve it hot with your choice of sauce, chips. Enjoy 😊.
