Veg Mayonnaise sandwich

Mayonnaise sandwiches are crunchy, creamy and packed with flavors. The filling is made by just mixing finely chopped veggies like capsicum, carrot, onion, tomato with mayo and flavoring ingredients. These mayonnaise sandwiches are great to serve for breakfast, snacks, kids lunch boxes.  Basic  mayo sandwiches served in some cafes are without toasting the bread. So if you don't like crisp toasted bread then you can just make the filling, spread it on the bread slice and serve. This recipe is super fast to make on busy mornings. So let's start.

Ingredients required:

1.) Mayonnaise - 3 tablespoon ( I used eggless mayo)
2.) Bread slices - 4
3.) Green capsicum - 2 tablespoon (finely chopped)
4.) Carrot - 2 tablespoon (finely grated)
5.) Tomato - 2 tablespoon ( finely chopped)
6.) Black pepper powder - 1/2 teaspoon
7.) Italian herbs ( optional) - 1 teaspoon
8.) Salt - as per taste
9.) Butter - For greasing ( 1-2 tablespoon)
10.) Tomato sauce / Red chilli sauce ( optional) - 1 tablespoon

How to make veg mayo sandwich:

1.) Finely chop the veggies and keep it aside. To a bowl add all chopped vegetables.

2.) Now add mayo, Italian herbs, black pepper powder, salt, mix everything well. Also add red chilli sauce to give spicy and tangy flavor to the filling.




3.) Take two bread slices. Spread the filling on the first bread slice. 


4.) Place second slice on first, apply butter on bread and toast it both the sides on tawa till golden brown and crisp.




5.) Serve it hot with a cup of coffee ☕.
