Sabudana vada/Sabudana cutlet

Sabudana vada also called as Sabudana Cutlet or Sabudana tikki is a deep fried appetizer that makes a good evening snack or breakfast. Since it is gluten free so perfect to serve for Indian fast days or vrat. It is a great source of calcium, iron, protein and loads of starch and carb so give instant energy during fast. Sabudana vada are made using sabudana (tapioca pearls), boiled potatoes, crunchy peanuts and mild spices. These are crispy and crunchy from outside and melts in your mouth as soon as you savor them. It is a satvik recipe which do not include onion and garlic. so let's start the recipe.

Ingredients required :

1.) Tapioca pearls (Sabudana) - 1 cup

2.) Boiled Potatoes - 2 medium

3.) Green chillies - 1-2 finely chopped

4.) Peanuts - 1/4th cup

5.) Salt - as per taste

6.) Red chilli powder ( optional) - 1 teaspoon

7.) Cumin (jeera) - 1 teaspoon

8.) Oil - 2 tablespoon + oil for frying vadas

9.) Garam masala powder (optional) - 1 teaspoon

10.) Dry mango powder/Amchur powder) - 1 teaspoon (optional)

Preparation :

1.) Wash Sabudana 2-3 times with water and then soak it in 1 cup of water for atleast 6-8 hours. ( when properly soaked, Sabudana pearls will be tender without any hard center. Do not undersoak or oversoak the sabudana).

2.) Heat oil in a pan and roast the peanuts on low flame. Peanuts should be crunchy with no rawness in the center. 

3.) Grate the potatoes with the help of grater and keep aside potatoes, peanuts and soaked sabudana.

4.) Heat 1 tbsp of oil in the pan add cumin into it and let it crackle. By the time grind the peanuts in a grinder to make a coarse powder.

5.) Further add green chillies, red chilli powder, garam masala powder and saute it for 30 sec.

6.) Now add grated potatoes, dry mango powder, salt in it and mix it well. Keep the mixture aside.


7.) Now add soaked sabudana, peanut powder in it and mix everything nicely using your hands to make a dough.

8.) Make small smooth balls from the dough and flatten them a little bit. Apply little oils in your palm while shaping the dough if it is sticky.

9.) Heat oil for frying the vada in a deep pan. Once the oil is hot, simmer the heat to medium flame. Drop 3-4 vada in the hot oil and fry them on both the sides till golden brown and crisp.


10.) Drain the crunchy vada on a plate lined with kitchen tissue. 

11.) Serve it hot with green chutney, tomato ketchup. Enjoy 😋.
