Papdi chaat
Papdi Chaat is a popular and yummy North indian snack which is enjoyed by people from all walks of life and is something that you cannot ignore. It is mainly prepared using papdis (small fried puris), curd, boiled chickpeas, boiled potatoes and sweet and sour chutney. It is one of the best chaat recipe that you can enjoy in summers as it is prepared using chilled curd. For that perfect snack, it is important that papdi should be super crispy. Here I have made papdi of wheat flour, you can even make of Maida or both in half and half ratio. Here is the step by step method to prepare Papdi chaat. So let's get started.

Servings - 3-4
Ingredients needed :
1.) Wheat flour - 1 cup ( For making 20-25 small sized papdi)
2.) Oil - 3 tablespoon to add into wheat flour
3.) Salt - 1 teaspoon
4.) Ajwain - 1/2 teaspoon
5.) Curd/Dahi - 1/2 cup
6.) Green chutney - 2-3 tablespoon
7.) Sweet and sour tamarind chutney - 2-3 tablespoon
8.) Boiled chickpeas/chhole - 1/2 small bowl
9.) Boiled potato - 1/2 small bowl
10.) Chaat masala powder - 1 tablespoon
11.) Red chilli powder - 1 teaspoon
12.) Pomegranate seeds - 2-3 tablespoon (optional) for garnishing
13.) Besan Sev/Bhujiya - 1/2 cup (optional) for garnishing
14.) Roasted cumin/Jeera powder - 1 teaspoon
15.) Oil for frying papdis
Steps to make Papdi :
1.) In a large bowl add wheat flour, salt, ajwain, oil and make a tight dough.(add very little water, we don't want smooth dough). Now make small balls out of that dough.
2.) In second way, you can make a big round roti of dough and with the help of a glass make circular shapes further make small dots with fork.
3.) Heat oil in a kadai/pan, add these papdis into it and fry them on low flame. The colour of the papdi should be light golden brown. Do not fry them on high flame else colour will become dark and it will give burnt flavour. Crispy papdis are ready.
