Vegetable manchurian gravy

Veg Manchurian gravy is a deliciously spicy and soupy Manchurian variation prepared with vegetables like cabbage, carrot and capsicum. It can be either served as spicy soup starter or can be accompanied with Chinese schezwan fried rice or noodles.Manchurian is a deep fried veg balls dipped in spicy gravy of cornflour. So let's start making it.

Cooking time : 15 mins
Servings : 2-3

Ingredients used :

For Veg Manchurian balls:
1.) Carrot - 1/2 cup finely shredded
2.) Cabbage - 1 cup finely shredded
3.) Capsicum /green bell pepper - 1/2 cup finely chopped
4.) All purpose flour/Maida - 1/3 cup
5.) Corn flour/ Corn starch - 2 tablespoon
6.) Salt - as per taste
7.) Black pepper powder - 1 teaspoon
8.) Cooking oil - for deep frying
9.) Ajinomoto(MSG) - 1 pinch (optional), i have not used it here.

For Gravy :
1.) Crushed ginger (Adrak) - 2 teaspoons
2.) Minced garlic ( lehsun) - 1 tablespoon
3.) Green chillies (Hari mirch) - 2-3 slit into two halves
4.) Soy sauce - 1 tablespoon
5.) Chilli sauce - 1 tablespoon
6.) Tomato ketchup - 1 tablespoon
7.) Cornflour/Cornstarch - 2 tablespoon
8.) Black pepper powder - 1 teaspoon
9.) Cooking oil - 1 tablespoon
10.) White vinegar - 1 tablespoon
11.) Salt - 1/2 teaspoon
12.) Spring onion - 2 tablespoon finely chopped for garnishing (optional)
13.) Water -  3 Cups 
14.) Onion - 1 medium finely sliced
15.) Carrot - 1 small finely sliced
16.) French beans - 2-3 finely chopped (optional)

Method for making Manchurian balls :

1.) In a bowl, Mix all the shredded veggies and add pinch of salt in it. Wait for 5 mins. Now take a Muslin cloth keep the veggies into it, make a potli out of it and start squeezing the potli. This step is to remove excess water which is present in the vegetables.
Note: I have used my hand to squeeze excess water from the vegetables.

 

2.) Now add all the chopped veggies, pepper powder, cornflour, Ajinomoto(MSG), Maida and pinch of salt into the bowl.



3.) Mix all the ingredients well into the bowl. Prepare 10-12 small round shaped balls from the mixture. Do not add water in the mix for making balls as water from vegetables will be sufficient to bind them. In case mix is not binding properly and small balls cannot be made, add some water in the mixture.

4.) Heat oil in a kadai (pan). Deep fry prepared balls on medium flame until they turn golden brown. Drain excess oil and transfer them to plate ( spread kitchen paper napkin on plate to absorb excess oil). 



Method for making gravy of Veg Manchurian :

1.) Dissolve 2 tablespoons of Cornflour in 1 cup of normal water. 

2.) Heat 1 tablespoon of oil in a pan. Add minced garlic, minced ginger, chopped green chillis, 1/2 cup of finely sliced carrot, beans and onion, Saute for a minute. Add soy sauce, chilli sauce and tomato sauce. Saute it for a minute.


3.) Now pour 2 cups of water, pepper powder and salt. Bring mixture to boil over medium flame. When it starts boiling, let it cool for a minute.

4.) Add dissolved Corn flour in a pan. Mix all gravy ingredients properly. Cook it on low flame for 1-2 mins.

5.) Add deep fried balls and cook for 3 minutes over medium flame.


6.) Turn off the flame and garnish it with chopped spring onion and white vinegar. Enjoy hot and spicy veg Manchurian with fried rice or veg noodles.
