Masala pasta(Indian style)

This simple and versatile desi masala pasta is a perfect go to for a busy weeknight dinner, weekend brunch or lunch box recipe. Indian style masala pasta features penne pasta coated with flavorful Indian spices, tomato sauce, italian seasoning, chilli flakes and lots of veggies. I love that spicy, slightly tangy mix of Indian Italian flavour that comes in every bite. What I like the most about this recipe is that we can use up lots of different vegetable, left over veggies in the fridge to make this dish filling. So let's jump on this super easy and tasty recipe.


Preparation time - 20 mins

Cooking time - 15 mins

Servings : 2

Ingredients required:

1.) Pasta - 2 cups ( penne, macaroni or any shape of your choice)

2.) Tomato puree - 1 cup

3.) Salt - as required

4.) Italian herbs - 1 tablespoon

5.) Chilli flakes - 1/2 teaspoon

6.) Capsicum - 1 medium (you can use any veggies like bell peppers, carrot, mushroom, beans, cauliflower, broccoli etc as per availability)

7.) Onion - 1 medium

8.) Tomato - 1 medium

9.) Garlic - 2-3 cloves

10.) Green chilli - 1 

11.) Ginger - 1/2 inch grated

12.) Tomato ketchup - 1-2 tablespoon

13.) Oregano - 1/2 teaspoon ( optional)

14.) Oil - 2 tablespoon +1/2teaspoon

15.) Water - as required ( for boiling pasta)

16.) Black pepper powder - 1/2 teaspoon

17.) Red chilli powder - 1/2 teaspoon

18.) Dry mango powder /Amchur powder - 1teaspoon

19.) Coriander leaves - chopped ( For garnishing, optional)

Method of Preparation :

1.) Finely chop all the vegetables and keep aside. Boil water in a deep pan, add 1/2teaspoon of oil and 1/2teaspoon of salt into it. Once boiled, add pasta into it and strain the water once cooked.



2.) Heat oil in a pan, add chopped garlic and green chilli. Saute it for 1 min till raw smell of garlic goes away. Do not the burn the garlic.


3.) Now add onion and grated ginger. Cook till onion becomes soft and transluscent.

4.) Further add chopped tomatoes, capsicum, tomato puree and salt. Mix, cover and cook till tomatoes becomes soft and mushy and veggies are tender. During the cooking process if sticks to the bottom of the pan add little water and continue cooking.

5.) Then add boiled pasta and all the spice powders ( Red chilli powder, amchur powder, black pepper powder), italian herbs, oregano, tomato ketchup. Mix it well and cook for few minutes.



6.) Top it up with oregano or chopped coriander leaves and serve it hot. Enjoy 😊
