Pasta in creamy peri peri sauce

Pasta is popular across the world and variety of pasta recipes are made using different sauces, veggies. I like the flavour and crunchiness of onion, capsicum, sweet corn in my pasta recipe, you can add any vegetable of your choice like broccoli, carrot, beans, mushroom to make it more healthy. Pasta dipped in creamy peri peri sauce tastes delicious. I have used fresh tomato puree which gives nice flavour to the recipe. You can have this dish as lunch or dinner with bread as side. So let's know how to make it.

Servings : 4

Ingredients required :

1.) Pasta - 3 cups ( I have used penne, can use of your choice)

2.) Capsicum - 2 medium roughly chopped

3.) Sweet corn - 1/2 cup

4.) Onion - 1 Large finely chopped

5.) Fresh tomato puree - 1/2 cup

6.) Tomato ketchup - 2 tablespoon

7.) All purpose flour/Maida - 3 tablespoon

8.) Milk - 2 cups (luke warm)

9.) Butter -2 tablespoon

10.) Peri peri sauce - 3 tablespoon

11.) Italian herbs - 1 tablespoon

12.) Oregano - 1 tablespoon

13.) Red chilli flakes - 1 teaspoon

14.) Black pepper powder - 1 tablespoon

15.) Salt - as per taste

16.) Oil - 2 tablespoon ( preferred olive oil)

17.) Garlic cloves - 5-6 finely chopped

18.) Water - as required ( For boiling)

19.) Coriander leaves - few chopped

20.) Ginger - 1/2 inch piece grated

21.) Green chilli - 1 finely chopped

Method of Preparation :

1.) Firstly boil  penne pasta in water by adding 1 tbsp oil and salt. Drain the water, add little salt, black pepper powder and oil, mix it well and keep pasta aside.

2.) Heat 1 tablespoon of oil in a pan, add chopped garlic, ginger, green chillies and saute it till raw smell of garlic goes away.

3.) Now add chopped onion, sweet corn, capscicum. Saute it for 5 mins.

4.) Further add salt, Italian herbs, black pepper powder, oregano and mix it well.

5.) Now add fresh tomato puree, tomato ketchup, mix it well and cook it for 5 mins. Transfer the mixture in a bowl.

6.) Heat 2 tablespoon of butter in a pan, add maida and stir it continuously.


7.) Now switch off the flame, add warm milk to it and keep stirring continuously to avoid any lumps. Make a smooth consistency creamy sauce. Add black pepper powder, salt, peri peri sauce, tomato ketchup and mix it well.


8.) Further add veggie mixture into the sauce. Mix it well and cook it for 5-8 mins. 

9.) Finally add cheese, penne pasta into the sauce mixture. Adjust spices, if found less you can add it to taste good. Cover the lid and cook for another 5 mins. Creamy peri peri pasta is ready.


10.) Garnish it with chopped coriander and serve it hot. Enjoy 😊.
