Cheesy Vegetable pasta
Veg cheese pasta is one of the most popular and easiest pasta recipe that one can cook. You can make it colourful and nutritious by adding vegetables of your choice. It can be served as a snack, lunch for kids or light dinner. In this recipe you can use sauces, condiments, pasta, cheese of your choice whatever suits your palate. Ingredients required :
1.) Pasta : 1 bowl
2.) Garlic : 3 cloves finely chopped
3.) Ginger : 1/2 inch piece finely chopped
4.) Carrot - 1 medium thinly sliced
5.) Capsicum - 1 medium thinly sliced
6.) Onion - 1 medium thinly sliced
7.) Boiled sweet corn : 3 tablespoon
8.) Green peas : 3 tablespoon
9.) Tomato puree : 1/2 cup ( you can even use 1 medium chopped tomato)
10.) Green chilli - 1 finely chopped
11.) Oil - 2-3 tablespoon
12.) Tomato ketchup - 3 tablespoon
13.) Red chilli powder - 1/2 teaspoon
14.) Italian seasoning - 1 tablespoon (optional)
15.) Dry mango /Amchur powder - 1 teaspoon
16.) Oregano - 2 teaspoon (optional)
17.) Cheese - 1 cup ( Any cheese of your choice, I have used both mozzarella and cheese cubes)
18.) Black pepper powder - 1/2 tablespoon
19.) Water - as required for boiling pasta
20.) Red chilli flakes - 1 teaspoon ( optional)
21.) Red chilli sauce - 1 tablespoon
Method of Preparation:
1.) Boil water in a pan, add pinch of salt, 1 tsp oil and pasta to it. Allow it to cook for 10 mins and then turn off the flame.
2.) Further, drain the water and wash the pasta with the cold water to avoid stickiness. Add little salt and black pepper powder and mix it.
3.) Heat oil in a pan, add ginger, garlic and green chilli and saute it for 1 min or till raw smell of ginger garlic goes away.
4.) Now add onion and saute it for few mins.
5.) Further add sliced capscicum, carrot, green peas, sweet corn. Saute and allow it to cook for few mins.
6.) Add tomato puree, salt, red chilli powder, amchur powder, Italian seasoning, 2 tablespoon of water and stir it well.
7.) Now add pasta, black pepper powder, salt, oregano, tomato ketchup, red chilli sauce and saute it gently.
8.) Add red chilli flakes, oregano, mixed herbs, grated cheese, saute it for few seconds and then turn off the flame.
