Spicy Rajma frankie /Rajma Wrap

Chatpata Rajma frankie is a high protein wrap recipe that is packed with flavors and taste from Rajma(red kidney beans) tossed with onion, tomato along with indian spices and delicious mayo spread. It helps you to stay strong and healthy. This recipe is perfect for breakfast, lunch or even for a kids lunch box. The consumption of rajma strengthens the immune system, lowers blood cholesterol, prevents diabetes and hypertension. So let's know how to make it.

Servings : 8 Wraps

Ingredients needed :
For the Rajma filling :
1.) Boiled Rajma (red kidney beans) - 2 small bowls
2.) Onion - 1 Large finely chopped 
3.) Tomato - 1 Large finely chopped 
4.) Oil - 2 tablespoon
5.) Ginger (adrak) - 1/2 inch piece finely chopped
6.) Garlic (lehsun) - 3-4 cloves finely chopped
7.) Green chillies - 2 finely chopped
8.) Cumin (jeera) - 1 teaspoon
9.) Red chilli powder - 1/2 tablespoon
10.) Garam masala powder - 1 tablespoon
11.) Salt - as per taste
12.) Coriander powder (Dhaniya powder) - 1 tablespoon
13.) Roasted Gram flour ( Besan) - 3-4 tablespoon (optional)
14.) Roasted cumin powder (jeera powder) - 1 tablespoon

For the Wrap :
1.) Whole wheat flour tortilla / Large Roti - 8
2.) Mayonnaise - 1/2 cup
3.) Onion - 2 small finely sliced
4.) Tomato ketchup - 4 tablespoon
5.) Chaat masala powder - 2 tablespoon
6.) Lemon juice - 2-3 tablespoon

Method of Preparation :
1.) To begin making the Rajma Wrap, soak the rajma overnight or for 6 hours and boil them till they are soft. Drain and discard the water.

2.) For making the filling, heat a kadai/pan and add oil. After oil is heated, add garlic, ginger, cumin seeds and saute it for 2 mins. 

3.) Now add chopped onion, tomato, green chillies and saute till onions become transluscent. Add all the powdered spices, fry for few mins so that all the veggies and spices get mixed well.

4.) In the same pan add boiled rajma. Check the salt and flavors and adjust to suit your taste. Give the rajma filling a brisk stir in high heat and allow it to become a thick mixture. Once done turn off the heat.

5.) Add Besan (optional) to this mixture if you find it too smooth. 
Note ( I have made cylindrical rolls of this mixture and then fried a little bit to have that golden brown layer outside the roll. You can even fill this mixture in roti like this. This is totally optional).


6.) The next step is to assemble the wrap. At the centre of the tortilla or roti, spread mayonnaise, place 2 tablespoon of rajma filling in a line, sliced onions, tomato ketchup, sprinkle chaat masala powder and lemon juice to give that extra tanginess. 

7.) Gently roll up the wrap and place it on tawa. Add few drops of oil and roast the wrap on both the sides to make it crispy golden brown outside.
8.) Serve the delicious and wholesome rajma wrap with mayo or ketchup. Enjoy !!!
