Gujarati Patra

Patra is a Gujarati recipe made with the goodness of gramflour(besan), Colocasia leaves, ginger, garlic and chilli paste, onion and a melange of spices. This lip smacking dish can be served as an appetizer or starter  on any occasions like anniversaries, potluck parties, family gatherings etc. This dish is first steamed and then you can either shallow fry or deep fry it. So let's start making this recipe.


Preparation time : 40 mins

Cooking time : 45 mins

Servings : 4

Ingredients required :

1.) Colocasia leaves (Arbi ke patte) - 4

2.) Gram flour ( besan) - 2 cups

3.) Onion - 1 Large

4.) Ginger - 1 inch piece roughly chopped

5.) Garlic - 5-6 cloves

6.) Green chilli - 3-4

7.) Salt - as per taste

8.) Turmeric (haldi) powder - 1 teaspoon

9.) Red chilli powder - 1 teaspoon

10.) Garam masala powder - 1 teaspoon

11.) Dry mango (Amchur powder)- 1 teaspoon

12.) Carom seeds (Ajwain) - 1 teaspoon

13.) Asafoetida ( hing) - 1 teaspoon

14.) Tamarind (imli) paste - 2 tablespoon

15.) Oil - For frying

16.) Water - as required

17.) Jaggery powder - 1/4cup (optional), I have not used here bcoz i like it as savoury dish.

18.) Mustard seeds (Rai) - 1/2 teaspoon

Method of Preparation :

1.) In a mixer jar, add chopped onion, garlic, ginger, green chillies and make a smooth paste.

2.) In a separate bowl, add besan, all powdered spices, tamarind paste, salt, ginger garlic, onion and green chilli paste, Jaggery powder(if you are using). Mix it well and add little water to make it a  smooth paste. Besan mixture should not be too runny.

 

I will tell you 2 ways to make Patra :

a.) In first way, add chopped Colocasia leaves into this besan mixture, make oval balls of it and steam it in a steamer for about 20 mins. I have steamed these balls in an idly stand placed in a pressure cooker. Keep aside the steamed balls.

b.) In second way, wash the Colocasia leaves and place them on a chopping board. With the help of the knife, carefully remove the veins from the centre of the leaves. Next, apply the besan mixture on one leaf and place another leaf over it. Make sure that the mixture is evenly coated over it. Continue this process with other leaves. 

c.) Now carefully roll the leaves and steam in a steamer for about 20 mins.

3.) When it cools down, cut the leaves into 1 inch slices.

4.) Heat oil in a pan over medium flame and add mustard seeds to it. Allow them to crackle. Now add the Patras and gently saute them for a minute.

5.) Garnish it with coriander leaves and serve it hot with green chutney or tomato ketchup. Enjoy !!!
