Amritsari fried fish
Fish Amritsari is a deep fried fish appetizer recipe which is spicy, delicious and easy to make. It was originated in the city of Amritsar (punjab). An authentic fish amritsari recipe is spicy in taste and uses lot of crushed spices. Here I have used catfish which is not very expensive and easily available in local fish market. In the marination, we have used gram flour, ginger garlic paste, thick curd and different spices. So lets jump onto the recipe.

Servings : 2-3
Ingredients required :
1.) Fish : 250 gms
2.) Thick curd : 2 tbsp
3.) Ginger garlic paste : 1 tbsp
4.) Garam masala powder : 1 tbsp
5.) Kashmiri red chilli powder : 1 tbsp
6.) Kasuri methi : 1/2 teaspoon
7.) Red chilli flakes : 1/2 tbsp
8.) Roasted gram flour/ besan : 1 tbsp
9.) Coriander/Dhaniya powder : 1/2 tbsp
10.) Lemon juice : 2 tbsp
11.) Turmeric/ haldi powder : 1/2tsp
12.) Salt - 1 teaspoon
13.) Oil - For deep frying
Method of Preparation :
1.) Cut the fish into small pieces. Wash it thoroughly with water. Pat dry on kitchen towel and transfer it to a dish.
2.) Marinate it with thick curd, ginger garlic paste, gram flour, lemon juice and all the powdered spices. Gently rub the marinate on fish pieces. (Do not add water, the consistency of the batter should be thick and not runny. Remember, we just have to coat little batter on fish pieces.) Leave it for 20 mins.
3.) Heat oil in a deep skillet on medium high flame and add fish pieces into it. Fry on both the sides till colour of the fish changes to golden brown. Do not fry the fish on low flame as it will turns to oily and soggy fish. ( I have used my electric fryer over here, the tank of the dryer was filled with oil and the temperature was adjusted to 170°C for 5 mins).
