Mutton curry

Mutton is often regarded as goat meat instead of sheep which is cooked in several ways. This recipe is simple yet delicious version of goat curry. Mutton is marinated with curd, ginger-garlic paste along with some Indian spices. Further curry is prepared using onions and homemade special dry spice powder. Mutton curry/goat curry is served with either plain rice and salad or with chapatis. So let's start making it.


Cooking time : 60 mins

Preparation time : 20 mins

Servings : 2-3

Ingredients used :
1.) Mutton/goat meat : 500 gms
2.) Onions : 3 medium size thinly sliced
3.) Ginger garlic paste : 2 tbsp
4.) Coriander powder - 2 tablespoon
5.) Red chilli powder - 1 teaspoon
6.) Salt : as per taste
7.) Oil - 3-4 tablespoon
8.) Curd - 1/2 cup
9.) Green chillies - 2 chopped
10.) Asafoetida : 1/2 teaspoon
11.) Black cardamom/badi elaichi : 2
12.) Green cardamom/choti elaichi : 4
13.) Black peppercorns/Kali mirch : 5-6
14.) Cinnamon stick/Dalchini : 1/2 inch piece
15.) Coriander leaves - few chopped for garnishing

Special spice masala :
1.) Black peppercorns/kalimirch : 20
2.) Cinnamon stick/Dalchini : 1
3.) Javitri : 1 small piece (optional) 
4.) Black cardamon : 2
5.) Green cardamom : 4
6.) Dry Coriander seeds : 2 tbsp



Note : Dry roast these spices with 1 teaspoon of salt in a pan for 2-3 mins to let the aroma comes out of the Dried spices. Once spices are cool enough, transfer it in a mixer jar and make powdered masala.

Method of Preparation :
1.) Marinate the mutton with curd, ginger-garlic paste, green chillies, red chilli powder, coriander powder, asafoetida, salt and chopped coriander. Keep it aside for 1 hour.

2.) Heat the cooking oil in a heavy bottomed pan or pressure cooker on a medium heat. Add dry spices(black and green cardamom, some peppercorns, cloves) in oil so that it release their aroma. 

3.) Now add sliced onions and saute it till it turns golden brown. Cook the onions for about 10 mins.

4.) Add all the powdered spices and saute it for 2-3 mins. Now add the marinated mutton along with 1 tbsp of special spice masala.
5.) Cook the mutton (about 20 mins) uncovered with occasional stirring till oil starts separating from the meat. Once oil separates out, add 1 cup of water, 1/2 teaspoon of Garam masala powder and pressure cook mutton to 3-4 whistles.    

6.) Transfer the mutton curry into a bowl and garnish it with fresh chopped coriander leaves, lime juice and serve it hot with plain rice or chapati.
