Maggi shakshuka

Shakshuka is a one skillet dish of gently poached eggs in a sauce of tomatoes, bell peppers, ginger, garlic, onion along with some warm spices like paprika, cumin, nutmeg(optional) and fresh herbs. It can be served as a breakfast, lunch or dinner recipe with sourdough, garlic bread or just like this. I have also used Maggi noodles in this recipe to give this dish a slight indianised version and a unique taste. So let's get started.

Servings : 3-4

Ingredients required :

1.) Eggs - 4

2.) Maggi noodles - 2 packs

3.) Tomatoes - 4 medium size finely chopped

4.) Capsicum - 1 medium finely chopped

5.) Onion - 1 medium finely chopped

6.) Green chillies - 2 small finely chopped

7.) Ginger - 1/2 inch piece grated

8.) Garlic cloves - 4 grated

9.) Red chilli powder - 1 teaspoon

10.) Salt as per taste

11.) Black pepper powder - 1/2 teaspoon

12.) Chilli flakes - 1 teaspoon

13.) Oil - 1 tbsp

14.) Coriander leaves - few chopped ( For garnishing)

15.) Water - 2 medium size cup

Method of Preparation :

1.) Heat oil in a large skillet/pan. Stir fry onion, ginger, green chillies and garlic till raw smell goes away. Do not overcook them.

2.) Slide in capsicum and tomatoes. Add paprika powder, salt and saute it for few mins. Now cover the lid of the pan and cook it for 5 mins.

3.) Now add the Maggi masala or tastemaker and 2 cups of water in the pan and let the water come to boil. At this point add Maggi noodles, cover the pan with lid and let it summer for 10 mins.

4.) Now make small four holes/pockets in the pan and crack eggs into these pockets.

5.) Now close the lid of the pan and let it pouch for 5 mins. Garnish it with fresh coriander leaves, black pepper powder, chilli flakes and serve it hot with whole wheat bread or garlic bread. Enjoy 😋
