Namkeen mathri(salted crackers)

Mathri is a traditional north indian crispy cracker which is generally prepared during festival times. The firm dough prepared with maida, semolina, Carom seeds and ghee is the key to its taste and texture. Mathri can be stored in big jars at room temperature which allows making it in bulk and store for future. 


Preparation time : 10 mins

Cooking time : 60 mins

Servings : 10-12 persons (Around 40 mathris)

Ingredients required :

1.) 2 cups of All purpose flour/Maida

2.) 1/2 cup semolina/suji

3.) 1 tsp Carom seeds/Ajwain

4.) Salt as per taste

5.) Oil - 4 tbsp

6.) 3/4 cup lukewarm water 

7.) Oil for frying

Method of Preparation :

1.) In a large bowl mix all the ingredients except water.

2.) Add the water little at a time to make a firm dough. Cover the dough and set aside for 15 mins or more.

3.) Divide the dough into 40 equal parts. Take each part of the dough and make a flat ball shape. Roll them into 2 inch circles.

4.) Prick each mathri with a fork in 5-6 places so the mathris do not puff when frying.

5.) Heat the oil in a kadhai/frying pan on medium heat.  The frying pan should have at least 2 inches of oil. To check if the oil is ready, put a small piece of  dough in the oil. The dough should make the oil sizzle and come up slowly.

6.) Fry a few mathris at a time. Make sure to place just enough mathris to cover the frying oil.

7.) Fry the mathris until both the sides are light golden brown. Place it on a plate and allow it to cool. Enjoy with pickle 😄
