Omelette curry

Are you guys bored of eating eggs in the form of pan fried, sunny side up, omelette or as scrambled!! Try making this delicious omelette curry when simple omelette doesn't excite you anymore. Omelette curry revolves around quick omelette cut into thick pieces simmered in onion and tomato based gravy. This recipe is a slight twist given to your regular omlette. As eggs are good source of protein you cant avoid it if you are an eggitarian. You can even use left over omelette in this recipe but I have cooked fresh omelette for this dish. So without much delay quickly jump on the recipe.

Servings -  4

Ingredients required :
1.) Eggs - 4
2.) Onion - 3 medium finely chopped
3.) Tomato - 2 medium finely chopped
4.) Garlic - 3 cloves finely chopped
5.) Red chilli powder - 2 tsp
6.) Coriander powder - 1 tbsp
7.) Garam masala powder - 1 tsp
8.) Salt - as per taste
9.) Cinnamon stick/ Dalchini - 1/2 inch piece
10.) Badi elaichi - 1 piece
11.) Choti elaichi - 4 piece
12.) Kali mirch/ black peppercorns - 5-6 piece
13.) Turmeric powder - 1 tsp
14.) Kali Mirch powder - 1/2 tsp
15.) Green chillies - 2 finely chopped
16.) Oil - 4 tbsp
17.) Coriander (For garnishing) - chopped
18.) Water - 1 cup

Method of Preparation :
1.) Omelette making : Break eggs into a large bowl, beat the eggs with an egg beater or with a hand blender till frothy. Now add half of the chopped onions, green chillies, salt, pinch of red chilli powder, 1/2 tsp garam masala powder, black pepper powder and mix it well.


2.) Heat 2 tbsp of oil in a pan. Pour the mixture into the pan and stir lightly till the eggs set. Cover and cook.

3.) Flip the omelette, cover and cook the other side too till golden brown.

4.) Roll the omelette on pan and cut it into approx 1 inch squares, keep it aside and arrange them on serving plate. Similarly make another omelette.


5.) Gravy preparation : Heat 2 tbsp of oil in a pan, add dry spices Badi elaichi, choti elaichi, Kali mirch, dalchini. Saute it for 2 mins so as to release their aroma in the oil.
6.) Now add chopped onion, garlic and cook it for 10 mins  Stir it continuously till raw smell of garlic goes away and onion becomes transluscent. 
7.) Further add chopped tomatoes( you can even add tomato puree) and powdered spices turmeric powder, coriander powder, garam masala powder, salt and mix it well. Add little water so that masala will not burn.

8.) Cook the masala till oil gets separated. Now add 1 cup of water and let the gravy cook for 5 mins. 

9.) Finally add omelette pieces into the gravy, cover and cook for 2-3 mins. 

10.) Garnish it with fresh coriander leaves and serve it hot with roti, ma'am or rice. Enjoy
