Butter chicken

Butter chicken/Murg makhani is one of the most popular indian chicken curry. It consists of chunks of grilled or lightly fried chicken cooked in smooth buttery & creamy tomato based gravy. Generally it is paired with Butter naan, chapati and rice. It is one of my favourite dish so lets get started people.

Preparation time: 15 mins
Cooking time: 30 mins
Serving: 2-3

Ingredients needed:
1.) Boneless chicken thighs - 250 gms
2.) Tomato - 5-6 large roughly chopped
3.) Onion - 1 small chopped
4.) Ginger paste - 1 tbsp
5.) Garlic paste - 1 tbsp
6.) Red chilli powder - 2 tbsp
7.) Salt - as per taste
8.) Cashews - 10-15
9.) Butter - 4 tbsp
10.) Heavy cream - 2-3 tbsp
11.) Sugar(optional) - 1 tsp
12.) Garam masala powder - 1 tsp
13.) Cardamom - 2-3 whole
14.) Chopped coriander leaves (for garnishing)
15.) Oil - 3-4 tbsp
16.) Dried fenugreek leaves (kasuri methi) - 1 tsp crushed

Method of Preparation:
1.) Roughly chop the boneless thighs into small even pieces, then marinate it by adding ginger garlic paste, red chilli powder and salt. Mix it well and keep it aside for 30 mins.
2.) After chicken got marinated, heat oil in a pan and fry chicken pieces till pinkish color of chicken gets disappeared and it is partially cooked. Take it out in a bowl and keep it aside.
3.) In the same pan, add 1 tbsp of oil again (can use butter as well) and saute chopped onion for 1 min.
4.) Add chopped tomato, cashews, ginger garlic paste, red chilli powder, sugar(very little else dish will become too sweet) garam masala powder and little bit of salt. Close the lid and cook it for 30 mins or till tomatoes become mushy.
Note: You can even blanch the tomato first, peel out their skin and seeds further use it for grinding. In this way you don't have to sieve the sauce mixture, but i found it easy this way so did like this.
5.) Now Grind this sauce mixture into a smooth paste.
6.) Now sieve this mixture directly into the pan so that we'll get smooth velvety paste with no skins and seeds of tomato. Add 1 spoonful of butter to it.
7.) Finally add heavy cream, chicken pieces and kasuri methi. Mix it well and let it cook for another 15 mins.
8.) Garnish it with chopped coriander and serve it hot with butter naan or chapati. Enjoy guys 😍😋
