Vegetarian quesadilla with tomato onion salsa

A Quesadilla is a mexican dish which is made of tortilla, a savory filling of ( spices, vegetables, chicken, beans etc), corn and shredded cheese, cooked on a griddle or pan.  It's a perfect meal for quick lunch, dinner, appetizer or breakfast. I have used whole wheat flour roti to make quesadilla more healthy. You can even use all purpose flour or corn flour rotis. This is a slightly indianised version of quesadilla which is super easy to make, yummy and full of protein. Lets know how to make a vegetable and bean stuffed quesadilla.


Preparation time: 20 mins
Cooking time: 15 - 18 mins
Servings: 4

Ingredients needed:
1.) Wheat flour tortillas/precooked Roti - 8
2.) Capscicum- 1 finely chopped
3.) Red kidney beans/Rajma - 2 cups boiled
4.) Onion - 1 medium finely chopped
5.) Sweet corns - 1/2 cup boiled
6.) Tomato - 1 medium finely chopped
7.) Garlic - 5 cloves finely chopped
8.) Salt - as per taste
9.) Red chilli powder - 1 tsp
10.) Red hot sauce/chilli sauce/sriracha sauce - 2 tbsp
11.) Taco seasoning(optional) - 1 tbsp
12.) Chat masala  - 1 tbsp
13.) Peppercorns powder (kali mirch) - 1/2 tsp
14.) Tomato ketchup - 2 tbsp
15.) Oil - For roasting rotis ( Around 5-6 tbsp), for stuffing 1 tbsp
16.) Butter - 3 tbsp
17.) Cheese - 1 medium bowl ( any cheese of your choice shredded or fine cubes.
Ingredients for tomato salsa/Pico de Gallo
1.) Tomato - 1 medium finely chopped
2.) Onion - 1 medium finely chopped
3.) Fresh coriander leaves - few chopped
5.) Salt - as per taste
6.) Lemon juice - 1 tbsp

Method of Preparation:
1.) Make a soft dough out of wheat flour and halfcook all the rotis before hand. You can even use leftover rotis, tortillas as per your choice. 
2.) Heat 1 tbsp of oil in a pan, add garlic and onion. Saute it till raw smell of garlic goes away and onion becomes transluscent.

3.) Now add all the chopped veggies capscicum, tomatoes, corn. Mix it well and cook it for 5 mins.

4.) Finally add kidney beans and add all the powdered spices salt, red chilli powder, chat masala powder, taco seasoning, kali Mirch powder. Let it cook for 7-8 mins.



5.) Now add sauces red chilli sauce, tomato ketchup and mix it well. Do not overcook the vegetables, switch off the flame, transfer the stuffing in a plate and keep it aside.


6.) To make a quick fresh tomato salsa, in a bowl add chopped onion, chopped tomato, fresh chopped coriander leaves, salt, and lemon juice. Mix it well and tomato salsa is ready.


Assembling of quesadilla : I will show you you 2 ways to assemble quesadillas. 
First method : Here I have used 2 tortillas.
7.) Warm the tortilla on a tawa by adding butter on both the sides. To one side add handful of cheese and spread it evenly.


8.) Now add the stuffing generously over it.


9.) Add another layer of cheese over it and then cover it with another tortilla. Lightly grease it with butter.

10.) Roast both the sides of tortillas to golden brown and crisp. Then with the help of pizza cutter slice it into four even pieces.

Second method : I have used 1 pre cooked roti.
11.) Warm the roti on tawa and add butter on both the sides. Now first add stuffing at one side on the roti followed by a layer of cheese. 

12.) Cover the second side of the roti over the first one. Press it gently and roast both the sides till golden brown. Serve it hot with fresh tomato salsa and sriracha sauce. Enjoy guyz.
