Broccoli apple salad
Broccoli Apple salad is healthy salad recipe which has fresh broccoli florets, carrots, apples, sweet potato, paneer and a tasteful dressing of Apple cider vinegar. Salads are great when they have right greens, right fruits and lip smacking dressing. This broccoli salad has smoothing texture and a very pleasing motley of flavors. You can even toss few walnuts, raisins or sunflower seeds into this salad. This nutritious broccoli apple salad can be made as side dish or as anytime snack. So let's start the recipe.

Ingredients required :
1.) Broccoli : 1 medium
2.) Carrot : 1 medium
3.) Boiled Sweet potato : 2
4.) Apple : 1 Large
5.) Paneer cubes/Cottage cheese(optional) : 5-6 medium size pieces
6.) Apple cider vinegar : 2 tbsp
7.) Honey : 2 tbsp
8.) Salt : as per taste
9.) Black pepper powder : 1/2teaspoon
10.) lemon juice : 1 tbsp
11.) Oil : 1 tbsp
12.) Walnuts : few pieces for garnishing
13.) Water : as required
Method of Preparation :
1.) Cut the broccoli florets, carrot, Apple and boiled sweet potato into small pieces.
2.) Bring a pot of water to a boil. Add 1 teaspoon of salt, broccoli florets and carrot in the boiling water and cook for 2-3 mins.
3.) Drain the water and transfer the broccoli and carrot in a pot with ice cold water to stop cooking. Heat 1 tbsp of oil in a pan and saute broccoli florets followed by carrot.
4.) Lightly fry Paneer cubes to golden brown in a pan.
5.) To a small bowl, add Apple cider vinegar, honey, salt, black pepper, lemon juice and mix it well. Dressing for the salad is ready.
6.) Toss together all salad ingredients in a large bowl.
