Tandoori gobhi

Tandoori gobhi is an easy and flavoured appetizer/snack recipe made with gobhi florets and marinated spices. You can marinate chunks of paneer, mushrooms and other vegetables in yogurt and tandoori spices to make it interesting variations. The addition of spices and yogurt adds more flavor to the taste of cauliflower(gobhi) and makes it a healthy snack as well as a good appetizer. So let's start the recipe.


Preparation time : 30 mins

Cooking time : 20 mins

Servings : 3-4

Ingredients needed :

1.) Cauliflower (gobhi)  : 1 small

2.) Thick plain curd - 3 tbsp (preferably hung curd)

3.) Ginger garlic paste : 2 tbsp

4.) Red chilli powder : 1/2 tbsp

5.) Turmeric/haldi powder : 1 teaspoon

6.) Coriander/Dhaniya powder : 1 tbsp

7.) Garam masala powder : 1 tbsp

8.) Roasted cumin powder : 1 teaspoon

9.) Gram flour/Besan : 2 tbsp

10.) Dried fenugreek leaves ( kasuri methi) : 1/2teaspoon

11.) Oil - 3 tbsp

12.) Chat masala powder : 1 teaspoon

13.) Kashmiri red chilli powder : 1 tbsp

14.) Salt - as per taste

Method of Preparation :

1.) Thoroughly wash and break gobhi into medium sized florets. Add 1 teaspoon of salt in some water and boil gobhi florets for 5 mins till they are slightly soft. This will allow the florets to absorb the marinade better.

2.) Heat 2 tbsp of oil in a pan. Add gram flour( besan) into the pan and saute  it for few mins so that no lumps form. Once a smooth paste is formed add Kashmiri red chilli powder and mix it well. Keep it aside.

3.) In a large bowl, add hung curd, ginger garlic paste, coriander powder, cumin powder, chaat masala powder, red chilli powder, salt, kasuri methi and mix it well. Add gram flour paste to this curd mixture and make a smooth paste of thick consistency. The consistency of batter should neither be too thick nor too runny. 



4.) Now add cauliflower florets into this curd mixture. Fold the mixture to coat the florets completely with the marinade. Cover the bowl and leave the mixture for some time.

5.) Heat 1 tbsp of oil in a pan and spread marinated gobhi florets.

6.) Roast on all sides until they turns golden brown. Alternatively, you can cook in tandoor or oven. To get the tandoori flavour, take the skewer and slide in gobhi florets, roast directly on the flame brushing oil.

7.) Finally enjoy tandoori gobhi sprinkled with chaat masala along with green chutney.
