Cheesy egg crepes
Crepes is a thin pancake like pastry typically served for breakfast or as a dessert. They are made with beaten egg, milk and flour. The eggs and milk are beaten together before being cooked in a large non stick frying pan in a thin layer. These easy crepe recipes are filled with either sweet or savory fillings. Today I will make crepe with egg filling. So let's jump on the recipe.

Ingredients required :
1.) Eggs : 6
2.) Wheat flour/all purpose flour : 1/4th cup
3.) Milk : 2 cups
4.) Onion - 1 Large finely chopped
5.) Salt : as per taste
6.) Amchur powder : 1 teaspoon
7.) Garam masala powder : 1 teaspoon
8.) Chaat masala powder : 1 teaspoon
9.) Green chillies - 2 finely chopped
10.) Oil - 2 tablespoon
11.) Mozzarella cheese - 1 cup shredded
Method of Preparation :
1.) Heat little oil in a frying pan, add chopped onions and saute for 2 mins. Further add salt, garam masala powder, amchur powder, chaat masala powder and green chillies. Cook for few mins.
2.) Whisk 4 eggs and add to the pan, keep stirring continuously until you begin to see the eggs coming together and forming a crumbly texture. Continue to stir until egg is cooked well.
3.) In a large bowl, break 2 eggs and whisk the egg yolks and whites together until light and fuffy. To this add milk whisk again. Finally add flour, salt and 1 tbsp of oil and whisk to make a smooth runny batter( Note : The batter should be of liquid consistency, do not add all the ingredients in one go. Add the wet ingredients first whisk and then add dry ingredients to avoid lumps).
4.) Heat a frying pan on a medium high heat and pour 1/4th cup of batter for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for about 2 mins until bottom is light brown, loosen with a spatula turn and cook on other side.
5.) Now fill each crepe with cheese and Egg mixture inside and fold from all the sides inward so that the filling does not comes out of crepe.
