Schezwan Gobhi manchurian

Gobhi Manchurian is one of the most popular manchurian recipes in indo-Chinese cuisine. Gobhi florets is first par boiled, marinated, then fried and tossed in Manchurian sauce which consists of spring onion, capscicum, ginger, garlic, a few Indian spices, soy sauce, red chilli sauce and vinegar. It goes well as an appetizer or as a side dish with main course of fried rice and noodles. This Manchurian recipe is popular in two variants Dry & with Gravy gobhi manchurian. Today I am making dry gobhi manchurian. So let's jump on the recipe.


Preparation time : 30 mins

Cooking time : 40 mins

Servings : 3-4

Ingredients required :

1.) Gobhi/ Cauliflower  : 1 Large

2.) Maida/All purpose flour : 3-4 tbsp

3.) Ginger - 1 inch piece finely chopped

4.) Garlic - 7-8 cloves finely chopped

5.) Green chillies - 2 finely chopped

6.) Soy sauce - 1 teaspoon

7.) Green chilli sauce - 1 tbsp

8.) Vinegar : 1 tbsp

9.) Salt : As per taste

10.) Schezwan sauce : 2 tbsp

11.) Oil - For frying

12.) Spring onions - few chopped

13.) Black pepper powder - 1 teaspoon

14.) Corn flour - 2 tbsp

15.) Green Capscicum (optional) - 1 small chopped

16.) Water : 500 ml

Method of Preparation :

1.)  Par boiling Cauliflower - Boil water in a pan, add pinch of salt and gobhi florets into the pan. Cover the pan and boil gobhi for 5 mins in medium to high flame. Take out the par boiled gobhi florets.


2.) Marinating Cauliflower : In a bowl add corn flour, maida, salt and 1/2  teaspoon black pepper powder. Mix it and make a smooth paste by adding little water. Batter should be of semi liquid consistency.  Add gobhi florets into this batter and coat it evenly.



3.) Deep frying Cauliflower : Heat oil in a large pan/Kadhai. Now add marinated cauliflower into the pan and fry it on medium high flame till colour turns golden brown( around 5 mins) on all sides. Keep aside fried gobhi florets.




4.) Making Gobhi Manchurian sauce : Heat 4-5 tbsp of oil in a pan, add chopped garlic- ginger, Saute it on medium high flame untill raw smell disappears. Now add chopped onions and cook it on medium flame until it becomes transluscent.


5.) Further add chopped spring onions, chopped green capscicum, green chillies, Schzwan sauce, green chilli sauce, soy sauce, black pepper powder, little bit of salt, tomato ketchup and mix it well.(You can adjust quantity of sauces as per your spiciness level).


6.) Now add gobhi florets to this sauce mixture and mix it well for 2-3 mins on medium flame. 


7.) At the end, Garnish Gobhi Manchurian with some chopped spring onions green at the top. Serve it hot with some veg noodles or fried rice. Enjoy😀.
