Veg lasagna in pan

Lasagna is an Italian dish made of stacked layers of thin flat pasta alternating with fillings like marinara sauce, Alfredo sauce, cooked ground meat, veggies, seasonings, cheese ( ricotta, parmesan), spices like garlic, oregano. The dish is topped with grated mozzarella cheese and baked until bubbly. Today I will be making veg lasagna in pan. This is so delicious recipe and one of my family's favourite. So let's get started.


Preparation time : 60 mins

Cooking time : 45 mins

Servings : 4

Ingredients needed :

1.) Whole wheat flour - 2 cups

2.) Finely Chopped vegetables of your choice - 1 Large bowl (i have used 1 onion, 2 carrots, 2 small capsicums, 2 medium sized potato)

3.) Grated Mozzarella cheese - 1 Large cup ( approx 150gm)

4.) Tomatoes - 6 large

5.) All purpose flour - 3 tbsp

6.) Italian seasoning - 2 tbsp

7.) Garlic cloves - 7-8 finely chopped

8.) Nutmeg powder - a pinch

9.) Salt - as per taste

10.) Butter - 50 gm

11.) Oil - 3 tbsp

12.) Black pepper powder - 1 tbsp

13.) Red chilli powder - 1 teaspoon

14.) Chaat masala powder - 1 tablespoon

15.) Chilli flakes ( optional) - 1 teaspoon

16.) Onion - 1 medium finely chopped

Method of Preparation :

1.) Marinara sauce/Red sauce -  Blanch the tomatoes and grind it to make a puree. Heat 1 tbsp of oil in a pan, saute chopped garlic for 1 min further add chopped onion and cook it for another 2 mins. Then add tomato puree, salt, little bit of black pepper powder and 1/2 teaspoon of Italian seasoning and cook it for 15 mins. Red sauce is ready, keep it aside and let it cool.




2.) White sauce : Heat butter in a pan on low flame and add all purpose flour, warm milk and whisk it rigorously until the consistency becomes thick and smooth.(Note: Do not whisk the sauce on high flame else lumps will form, always turn off the flame when mixing the flour and milk and whisk rigorously). Now add little salt, nutmeg powder and black pepper powder. Creamy white sauce is ready, keep it aside and let it cool.





3.) Heat oil in a frying pan, saute garlic, onion, capsicum, carrot and potatoes on medium flame. Add salt, pepper powder, chaat masala powder and let it cook for 5 mins.



4.) Now for making lasagna sheets, in a large bowl take wheat flour, 1/2pinch salt, 1 tbsp of oil and make a dough out of it. Divide the dough into 4 equal balls and roll it with rolling pin in equal round shape as that of a pan so that the sheets fit into the pan. Place each round sheet on tawa and roast for few secs on each side. Keep aside all sheets.




Assembling lasagna in pan:

1.) In the pan, pour 3 tbsp of red sauce, 2 tbsp of white sauce and place a sheet over it. Further on the sheet pour another layer of red and white sauce followed by veggies, Italian seasoning and cheese.



2.) Make all the stacked four layers similarly. Finally garnish it with loads of cheese and chilli flakes. 


3.) Cook lasagna on medium flame for 5 mins further 20 mins on low flame. Serve it hot. Enjoy 😋.
