Veg Burrito (Indian style)

Burrito is a mexican food which consists of a wheatflour/all purpose flour tortillas with a filling(which can be of chicken, beef, pork, beans, rice, spinach, corns etc) wrapped in a closed end cylinder where tortilla is folded around the filling. It is easy to make and tastes delicious. lets know how to make it with some indian twist.

Servings: 2

Ingredients needed :
1.) Tortillas (or you can even make roti out of all purpose flour) - 4
2.) Kidney beans/black beans - 1 can
3.) Rice - 50 gms
4.) Sweet corn - 1/2 cup
5.) Garlic paste - 1 tsp
6.) Salsa sauce - 5-6 tsp
7.) Sriracha hot sauce - 4 tsp
8.) Green bell peppers - 1 finely chopped
9.) Onion - 1 small finely chopped
10.) Tomato - 1 finely chopped
11.) Lettuce (optional) - finely chopped
12.) Tomato ketchup - 3-4 tsp
13.) Chat masala - 2 tsp
14.) Sour cream - 4 tsp
15.) Oil - 2 tsp
16.) Salt - as per taste
17.) Red chilli powder - 1 tsp
18.) Garam masala powder - 1 tsp
19.) Any cheese of your choice ( i have used parmesan here) - 3-4 tsp

Preparation:
1.) Chop all the vegetables into fine pieces prior in order to avoid hassle at the time of arranging a burrito.

2.) I have used here black beans can, if you don't have it, soak 100 gms of red kidney beans in water for about 4 hours then boil & use it.
3.) Lightly warm the flour tortillas from both sides on a pan & keep it aside.

Method:
1.) Heat oil in a pan. once oil is hot enough, add garlic paste followed by chopped onions. Saute it till it becomes transluscent.  Now add all the spices. stir it well.
2.) Now add boiled beans & rice into the pan. Mix it & add 1 cup of water to this mixture. Cook it on medium flame for 20 mins. check if the rice elongated & cooked. Then switch off the flame.
 3.) Add 2 tsp of salsa sauce into the pan & mix it well. your filling is ready.


Assembling burrito:
1.) Spoon the rice & black bean mixture onto the flour tortilla followed by salsa sauce & green peppers, tomato, corns, lettuce.
2.) Sprinkle some chat masala. Add hot sriracha sauce, tomato sauce, some sour cream & parmesan cheese.
3.) Fold in the sides of the tortilla over the filling & roll up to completely enclose. Cut in half. serve it warm with nachos & salsa. Enjoy 😊😊
