Mooli paratha

Mooli Paratha is a delicious punjabi flat bread recipe which is made up of wheat flour and stuffed with grated spicy cooked radish. Stuffing is lightly seasoned with spices. Parathas are versatile, filling and makes a wholesome breakfast or lunch. I grew up eating different stuffed parathas in my lunch box 90% of the time. They are mostly served with butter, raita, mixed pickle or green chutney.  So lets start the recipe.


Preparation time: 15-20 mins
Cooking time: 5 mins
Serving: 2-3

Ingredients used:
1.) Radish (mooli) - 1 cup grated
2.) Asafoetida (hing) - a pinch
3.) Cumin seeds(Jeera) - 1 tsp
4.) Garam masala powder - 1/2 tbsp
5.) Coriander powder - 1/4 tbsp
6.) Red chilli powder - 1/2 tbsp
7.) Salt - as per taste
8.) Chaat masala (optional) - 1 tsp
9.) Amchur powder - 1/2 tbsp
10.) Fresh coriander leaves - few chopped
11.) Green chilli - 1 chopped
12.) Ginger (optional) - 1/2 inch grated
13.) Oil - 3 tbsp for stuffing, also for roasting parathas as required
14.) Wheat flour (atta) - 1 cup
15.) Water - 1/2 cup
16.) Butter to serve with parathas

Method of Preparation:
1.) Prepare the whole wheat dough with 1 tsp of salt and 2 tsp of oil in it and set it aside.
2.) Grate the radish, squeeze all the water from it and place it on a plate.

3.) Heat oil in a pan, add cumin seeds once it splutters add hing followed by all the powdered spices. Mix it well.


4.) Now add ginger, chopped green chillis and radish, cook it for 2-3 mins. Do not overcook the radish. 


5.) Set it aside this mixture on a plate, add chopped coriander on it and let it cool.


6.) Divide the dough in small round equal balls. For making stuffed parathas, we will roll two parathas and seal the filling in between.
7.) Dust the surface with some flour, start rolling the parathas in equal shapes and diameter.

8.) Now take a tbsp of mooli stuffing and spread over one paratha. Leave the edges.


9.) Grease the edges lightly with oil.
10.) Place another rolled paratha on top and carefully seal the stuffing in between.


11.) Gently tap in the center. Now using a belan, roll again so that both layer gets firmly attached.
12.) Heat tawa on medium high flame and once tawa is hot, sprinkle some oil on it.
15.) Now place the paratha and let it cook on one side. Flip it over, add some oil and roast it for 2 mins.


12.) Cook the paratha untill it turns golden brown. Enjoy this yummy paratha on sunday brunch or anytime with curd and pickle😍😋
