Chicken Kathi roll

Chicken kathi roll is a famous street food item in india which is stuffed or rolled with either different meat or vegetables and even with paneer(cottage cheese) and egg. Also called as Frankies in some regions of india. Enjoy this yummy, mouth watering, scrumptious snack. Let's know how to make it.
Preparation time: 30 mins
Cooking time: 45 mins
Makes: 4 rolls

Ingredients for filling:
1.) Boneless chicken thigh or chicken breast - 450 gms or 1 lb
2.) Medium sized onion - 1 finely chopped
3.) Medium sized tomato - 1 finely chopped
4.) Garlic paste - 1 tsp
5.) Ginger paste - 1 tsp
6.) Green chillis - 2-3 slit
7.) Red chilli powder - 1/2 tbsp
8.) Garam masala powder - 1/2 tbsp
9.) Chat masala powder - 1 tbsp
10.) Fresh cilantro/coriander - finely chopped
11.) Oil - 2-3 tsp
12.) Salt - as per taste
13.) Eggs - 2-3 whipped

For making Dough:
1.) All purpose flour/maida - 1/2 cup
2.) Wheat flour - 1/4 cup
3.) Oil - 2-3 tsp
4.) Water - 5-6 tbsp
5.) Salt - 1 tsp

How to make stuffing/filling:
1.) Chop off the skinless thighs of chicken into small pieces, wash and drain excess of water.
2.) Heat oil in a pan on medium high flame, then first add chopped onions followed by ginger and garlic paste and saute it till onion becomes transluscent.

3.) Then add green chillis and chopped tomatoes, cook for 2-3 mins till mixture releases some oil.
4.) Add all the spices - red chilli powder, garam masala powder, chaat masala, salt and mix it well.
5.) Finally add chicken pieces, mix it . Cover and allow the chicken to cook ( to prevent burning stir frequently).
6.) Once chicken cuts easily, take off the lid, dry and remove excess of liquid from the chicken.

7.) Take out the filling in a bowl and let it cool for 10 mins.

How to make roti out of dough:
1.) Combine the two flours, add salt and mix it well.
2.) Add 1 tsp of oil and rub it into flours, then sprinkle very small amount of water to make a dough (do not use too much water else the dough will become soggy). The dough needs to be very soft.
3.) Knead it several times.
4.) Drizzle 2-3 tsp of oil over the dough.
5.) Cover it and set it aside for 15 mins.
6.) Remove the cover, knead it for 1 min. Heat the tawa on medium high flame.
7.) Make 4 balls out of the dough, take 1 ball, flatten between your palms and roll to form a roti. Dust in some all purpose flour in between the process. (i have used ready made tortillas over here)
8.) Flip the roti on the tava cook it for few seconds and again flip it on the other side, Once the bubble starts to appear the roti, pour 1/2 a beaten egg on it.

9.) Smear the egg and flip roti one more time very carefully.
10.) Drizzle some oil & let it cook for 1 min on medium high flame.
11.) Make sure roti is fully cooked on both the sides, then place it on a plate.

Assembling of the rolls:
1.) To the roti add the generous amount of filling followed by sliced onions, cilantro, lime juice chutneys or sauces of your choice ( i have used here hot chilli sauce , green chilli sauce & tomato ketchup).

2.) Roll the roti with the chicken away from you to make a tight roll.
3.) Serve it with hot sauce.
