Pav bhaji

Pav bhaji is an indian street food which comprises of spicy curry of mixed vegetables (bhaji), served with soft buttered pav (bread bun), salad of onion and cucumber. This curry is a blend of spices, boiled and mashed veggies which gives it smooth yet chunky texture, mouthwatering aroma and taste. This versatile dish can be made at lunch, dinner, housewarming parties, birthday parties, potlucks etc. I personally love this dish as it is filling, nutritious and healthy. Lets learn how to make it.

Servings: 2

Ingredients needed:
1.) Vegetables of your choice (here i have taken) -:
     Carrot - 2
     Cauliflower - 1 small
     Beans - 5-6
     Capscicum - 1 large
     Potato - 1 large
2.) Onion - 1 large finely chopped
3.) Garlic - 4-5 cloves finely chopped
4.) Tomatoes - 1 large finely chopped
5.) Ginger - 1/2 inch finely chopped
6.) Red chilli powder - 1 teaspoon
7.) Salt - as per taste
8.) Pav bhaji masala - 3 tablespoon
9.) Garam masala powder - 1 tablespoon
10.) Oil - 3 tablespoon
11.) Pav buns - 8
12.) Butter - 3-4 cubes (For bhaji), also for toasting buns(as required)
13.) Coriander leaves finely chopped (optional)- few
14.) Lemon juice - 2 tablespoon
15.) Green chillies - 1 finely chopped
16.) Water - as required

Preparation of Bhaji:
1.) Roughly chop all the vegetables. wash and rinse it.

2.) Boil or pressure cook the veggies with 2 small bowls of water.
3.) Once boiled, keep it aside and let it cool for 10-15 mins.


4.) Mash all the vegetables with the help of masher and if you dont have a masher, blend it in a blender for few seconds but remember don't over blend it otherwise it will become a smooth paste.
5.) Heat oil in a Kadhai/pan. Add ginger and garlic and green chillies, saute it for few mins till raw smell of garlic goes away.


6.) Now add chopped onion and cook it till it becomes soft and transparent.


7.) Further add, powdered spices like red chilli powder, salt, garam masala powder and 1 tbsp of Pav bhaji masala. Mix it well.

8.) Now add chopped tomatoes, mix it well and cook it till the tomatoes becomes soft and mushy.


7.) Finally add all the mashed vegetables and 2 tbsp of Pav bhaji masala into the pan. Mix it well and cook for 10-15 mins till raw smell of veggies goes away with occasional stirring.



9.) Adjust salt, Garam masala, Pav bhaji masala at this stage, add more if required. Add 2 tbsp of lemon juice for extra tanginess.
10.)Turn off the flame, add little butter on bhaji to make the taste buttery. Set it aside.

11.) Heat tava on a medium flame and cut the buns into equal halves.
12.) Add 1 tsp of butter on tava and place both the halves of bun over it. shallow fry the buns on both the sides untill it turns golden brown.

13.) Transfer the buns and bhaji into a plate. Serve it with onion cucumber salad and a wedge of lemon. Enjoy 😋😋.
